Lemon & Goji Macaroons

This simple dessert requires very little time and just a few ingredients. The result is a light but decadent treat that will have people craving more- be sure to make extra!  Serves 6

  • 1 1/2 cups shredded unsweetended coconut

  • 1/4 cup coconut oil, room temperature

  • 1/4 cup raw agave nectar or grade b maple syrup

  • 1/4 cup finely ground cashews

  • 1 tsp sea salt 

  • 1 Tablespoon goji berries

  • zest of 1 lemon

In a bowl, combine all ingredients. Use fork or your hands to fully incorporate coconut oil, making sue to leave no lumps. Transfer mix to the refrigerator to chill for 15 minutes.
