Using fresh local tomatoes, this could easily be dinner on a hot summer night.
Recipe Serves 4
• 1 avocado, sliced lengthwise
• 1 ripe tomato, cut in half moon slices
• 5-7 fresh basil leaves
• 2 Tbsp extra virgin olive oil
• 2 Tbsp balsamic vinegar
• 1 tsp agave nectar
• pinch sea salt
In a small bowl combine oil, vinegar, agave, and salt and mix well. On a plate, layer avocado, then basil leaf, then tomato. Continue this while creating a fan until your last slice of tomato. Using a spoon, drizzle your salad with the sweet balsamic dressing. Enjoy!
