Quite possibly the perfect party appetizer.

Recipe Serves 4

• 4 rice paper wrappers, brown or white
• 1 /2 cup shredded carrots
• 1 /2 cup shredded red cabbage
• 8 fresh basil leaves or a small handful fresh cilantro
• 8 slices avocado
• 16 slices red bell pepper 

Fill a bowl with warm water. Dip one rice paper wrapper in for about 10 seconds, just until it starts to get pliable. Lay your paper flat on a cutting board and fill evenly with 2 Tbsp carrots, 2 Tbsp cabbage, 4 pepper strips, 2 slices avocado, and 2 basil leaves or cilantro. Fold sides in tightly where the filling ends and roll tightly away from you until it is sealed. Place seam side down. Repeat with remaining spring rolls. Cut each in half on a diagonal and serve with dipping sauce. 


• 1 / 4 cup carrots, diced
• 1 /2 inch piece fresh ginger
• 1 clove garlic
• 1 Tbsp raw apple cider vinegar
• 1 tsp raw agave nectar
• 1 Tbsp extra virgin olive oil
• 2 Tbsp filtered water
• 1 tsp tamari
• dash cayenne
*Blend all ingredients until creamy
