BLACK BEAN BURGER

A fun, flavorful addition to any BBQ or summer dinner. Makes 7 burgers.

Ingredients  

• 2 cups cooked black beans, divided in half
• 2 cups cooked brown rice
• 1 /2 cup diced yellow onion
• 1 clove garlic
• 1 / 4 cup olive oil
• 2 tsp sea salt
• 1 / 4 cup nutritional yeast
• 1 tsp cumin
• 1 tsp chili powder
• 1 /2 tsp black pepper
• 1 / 4 cup diced red bell pepper
• 1/2 cup corn
• 2 Tbsp cilantro, chopped
• 1 / 4 cup garbanzo flour

Instructions   

Preheat oven to 400 degrees and line a baking sheet with parchment paper. In a mixing bowl, add 1 cup black beans, rice, onion, garlic, oil, and spices. Stir to combine. Add mixture to a food processor and blend until ground to a paste. Transfer back to mixing bowl and add peppers, corn, cilantro, and garbanzo flour. Mix well. 
Scoop 1 /2 cups of mixture onto baking sheet, lightly shaping as necessary. Mixture will be slightly loose, so do not worry. Bake 20 minutes, flip, and bake an additional 10 minutes. 
Serve on a sprouted bun with avocado, tomato, red onion, and sprouts or your favorite toppings! Enjoy.
